Twig’s Huffel Bread with Peanut Butter and Chia Jelly

Bread Ingredients:

  • 1 1/4 cups buckwheat groats
  • 1/2 cup raw sunflower seeds
  • 1/2 cup raw pumpkin seeds
  • 1/2 tsp baking soda
  • 1/4 cup chia seeds
  • 4 medjool dates
  • 1 3/4 cups water
  • 1 Tbsp apple cider vinegar

Chia Jelly Ingredients:

  • 2 cups strawberries
  • 1/4 cup chia seeds

Other Ingredients:

• All natural peanut butter

Directions:

The night before making the huffel bread, make the jelly. Add the strawberries and chia seeds to the blender and blend on high until smooth. Add 2-4 tablespoons of water if needed to get the strawberries to blend. Pour into a clean jar or container, cover, and refrigerate overnight. The jelly will thicken as it sits overnight.

To make the bread:

Preheat oven to 350 degrees.

Place the buckwheat groats, sunflower seeds, and pumpkinseeds in a dry blender and blend on high until well ground. Pour into a medium mixing bowl. Stir in the baking soda.

Place the chia seeds in a dry blender and blend on high until ground. Add the remaining ingredients and blend on high until smooth. Pour this mixture into the mixing bowl and stir to mix with the ground groats and seeds.

Line an 8 x 8 baking dish with parchment paper. Pour the batter into the dish. Smooth the top with a spatula if necessary. Bake at 350 degrees for 30 minutes.

Allow to cool for 30 minutes before slicing.
